VEGAN APPLE CINNAMON PIES by myveganbeli 💗

apple filling:

6 tbsp brown sugar
1 tbsp cinnamon
the juice of a lemon
1/2 vanilla bean
3 peeled and chopped in squares apples

toppings:

6 tbsp aquafaba
some brown sugar to sprinkle

vegan crust:

2 1/2 cups all-purpose flour
2 tbsp brown sugar
a pinch of Himalayan salt
6 tbsp of ice water
1/2 cup of solid coconut oil

preparation time: 20 minutes
total time: 1 hour
serving size: 3-4 serves

METHOD:

To make the vegan pie crust, start by mixing all the ingredients in a food processor for less than a minute until you get an even dough.

Divide the dough into 6 parts, wrap each of them in plastic wrap and allow them to cool down in the fridge for 20-30 minutes.

On a floured surface roll out the dough to fit each mold, you will use three parts as a base and the other three to make the braid for each apple pie, find the picture to see how it must be made.

In a medium size pan, add the chopped apples, lemon, sugar, and cinnamon, give it a mix and then cover it with a lid.

Cook for 15 minutes at medium-high heat until soft. Allowed them to cool down before making the apple pies.

I am making three mini apple pies, to do so, cover the inside base of each mold with the dough, then fill it with the apple mix that we just made and cover it with more dough.

Then brush the top with some aquafaba and sprinkle some brown sugar on top.

Bake for 10 minutes at 250ºC/480F in the oven.

Allowed them to cool down a bit before serving.
