Vanilla + blueberry donuts

250g (2 cup) plain flour
2 tsp baking powder
1/2 tsp salt
1 1/3 cup preferred plant milk
2/3 cup raw/coconut sugar
1/2 cup light-flavoured oil (Like grape seed oil)
2 tsp Apple cider vinegar
2 tsp pure vanilla extract
1/2 cup frozen blueberries


1. Preheat oven to 180C/360F, and grease a donut pan (makes approx 15). 2. Add all wet ingredients (from milk downwards) to a small bowl, and combine well. Set aside.
3. In a mixing bowl, sift in flour and add dry ingredients. Mix well, then pour in wet ingredients. Combine until smooth, then add blueberries, and fold through.
3. Spoon mixture into greased donut holes. Bake for 9-12 mins. Allow to cool for 3-4 mins, before turning onto a wire rack to cool completely.

To make glaze:

1 cup organic icing sugar, sifted
2 Tbsp lemon juice
1-2 tsp freeze dried, powdered berries

1. Add ingredients to a bowl and whisk together until glossy.
2. Dip each donut into the glaze*, then allow to set a little before adding extra zest or vegan sprinkles. *test 1 donut first- If glaze is too runny, add more icing sugar. It shouldn’t all run off onto the plate.
