Smoky Vegan Mac and Cheese

👉 Serves 2⁣
4 cloves garlic, roughly chopped⁣
1/2 tsp oregano⁣
1 tsp paprika⁣
~1/2 tsp salt, more to taste⁣
1 1/2 cups sweet potato (1 small potato), skin removed, cubed ⁣
1/3 cup hemp hearts⁣
1 1/2 cup water⁣
1/2 cup broth ⁣
1/4 cup nutritional yeast⁣
1 tsp Dijon mustard⁣
1 tbsp lemon juice ⁣
4-6 oz pasta of choice

👉 to serve:⁣
Red chili flakes ⁣
Chopped kale, optional⁣

👉 Steps
​In a medium saucepan begin sautéing garlic and sweet potato for 5-10 minutes. Meanwhile blend your hemp hearts, water, and broth together until a smooth “milk” forms. Set aside. ⁣

Add paprika, oregano, and salt to the sweet potatoes and saute for 30 seconds. Pour in hemp mixture and allow to simmer until potatoes are fork tender ~15-20 minutes. ⁣

Begin boiling your pasta water and cook according to package. Reserve 1 cup pasta water to thin out sauce if needed.⁣

Transfer to a high speed blender with nutritional yeast, dijon mustard, and lemon juice. Blend on high until a smooth sauce forms. Pour over noodles and serve with kale. Add some of the reserved pasta water if needed to thin out sauce.
