Simple chickpea curry

Ingredients:
2 cloves garlic, minced
1 medium onion, diced
1 large carrot, peeled and chopped
1 bell pepper, diced
2 tbsp tomato paste
1/2 can coconut milk
1/2 can chopped tomatoes
1 can chickpeas, drained and rinsed
1 tsp cumin
1 tsp turmeric
1 tbsp curry powder
Juice of 1/2 lemon
Salt and pepper to taste

Instructions:
First, cook the onion and garlic in either water or oil for 2-3 minutes. Next add the carrot, pepper and tomato paste. Cook for 4-5 minutes more, until the vegetables soften. Now add the coconut milk, chopped tomatoes, chickpeas, cumin, turmeric and curry powder. Simmer over a medium heat, stirring frequently, for around 10 minutes and add more coconut milk if the sauce starts to dry out. Add the lemon juice and season to taste with salt and pepper before serving.
