Quick & Easy 1-Pot Vegan No-Chicken Soup by veganreset 💜 Ready in 12 minutes!

(serves 2)

Ingredients:

160g (5.65oz) vegan “chicken”
2 cups vegetable broth
10 grape tomatoes (whole)
7-10 small-medium mushrooms, chopped or sliced
1/2 large head of bok choy, chopped
1 green onion, sliced/chopped
2 tsp olive oil
2 garlic cloves, minced
1/2 tsp fresh grated ginger (or dried)
A pinch of each sea salt & pepper

Directions:

1. Add all ingredients except the broth to a pot, mix well and add a lid.
2. Cook over medium to high heat for 5 minutes (stir a few times).
3. Add the broth, mix, up the heat to high, add the lid and cook for another 5-6 minutes. Taste test and add more salt/pepper if needed.
4. Enjoy!

Suggested alternatives:

Vegan chicken -> chickpeas, tempeh, baked tofu (added at the end), butter beans

Vegetable broth -> miso soup

Bok choy -> kale, Swiss chard, collard greens

Grape tomatoes -> bell peppers

Mushrooms -> zucchini

Olive oil -> vegan butter, coconut oil

Green onion -> shallots

Other suggested add-one/ingredients -> chili peppers, lemongrass, cilantro.
