Marbled pumpkin banana chocolate bread

1 3/4 cup of flour
1/2 cup of oat flour (blended oats)
2 tsp of baking powder
1 tsp baking soda
3/4 packed cup of brown sugar
A pinch of salt
1/2 tsp of cinnamon,
1.5 small VERY ripe bananas
1 cup of pumpkin purée (roasted pumpkin & then blended)
1 cup of plant based milk w/ 1 heaping tbspn of fresh lemon juice. Leave aside to curdle.
1/2 cup of coconut oil, melted.
2 T of vegan butter.

Additional ingredients:
1/4 cup of cocao powder
2 Tbspn of plant based milk.

Preheat oven to 350F.
1. Mix all your wet ingredients & mix well.
2. Mix together your dry ingredients and mix well.
3. Fold your wet ingredients into your dry, mix thoroughly.
4. Divide your batter 40/60. With 40 % being for the lighter batter. You will be adding cocoa powder and plant milk to it should it should become more or less the same quantity as the 60 percent you divided.
5. In the less batter, place 1/4 cup of cocoa powder & 2 T of milk. Mix.
6. Start w/ the light batter (the one that was 60 percent) and start spreading a thin layer, then place the darker layer and then keep alternating until you’re done your batter. Swirl a design at the top and place two halves of a banana on top.
7. Line a loaf pan and grease the sides. I find using parchment paper prevents the sides from getting brown/burnt whilst cooking.
8. Cook for 75 minutes.
