This light easy recipe is ready within 35 minutes and paired with a tasty homemade BBQ and coconut sauce!

​Ingredients:

​BBQ sauce: (can use store bought sauce instead)
1/2 cup tomato paste
1/4 cup apple cider vinegar
1 tbsp onion powder
1 tsp garlic powder
Salt and pepper, to taste
3 tbsp brown or coconut sugar
1 tsp tamari or soy sauce
1 tbsp dijon mustard
1-2 tbsp water, to thin

​Coconut sauce:
1/4 cup coconut yogurt
1/2 lime, juiced
Salt and pepper to taste

Jackfruit
400g can jackfruit in water or brine
8-10 lettuce cups
1 carrot, julienned
1/4 red cabbage, shredded
1 cucumber, julienned
1 spring onion, sliced
1/2 avocado, diced
Sesame seeds

​Steps
1. Preheat oven to 200 degrees celsius. Strain the jackfruit and squeeze it between your hands to press out as much water as possible and set aside in a bowl.
2. Add the BBQ sauce ingredients to a saucepan over medium heat and stir until combined. Bring to a simmer then reduce heat to low and cook for 5-10 minutes, stirring occasionally. Adjust the flavour as you desire.
3. Add the sauce to the jackfruit and combine. Spread onto a baking tray lined with parchment paper and bake for 15 minutes until lightly browned and crispy. In the meantime, combine the coconut sauce together in a small bowl.
4. Serve in lettuce cups with carrot, cabbage, cucumber, spring onion, avocado, sesame seeds and a drizzle of the coconut sauce.
