🌮 VEGAN QUESADILLA de ATÚN
Vegan chickpea “tuna” that yes is so good in a sandwich but try it in a quesadilla too!!! It’s so bomb I promise😻🔥

This is inspired by something I grew up eating😌
Quesadillas were a staple in our 🇲🇽 Mexican home growing up… and sometimes my mom would throw tuna salad into it & it was always *chefs kiss😗*

Chickpea “tuna” salad
1 can chickpeas (also known as garbanzo beans), drained and rinsed
1 celery rib, chopped very small
1/8 of a red onion, chopped very small
1/4 of a cucumber, peeled and chopped very small
2-3 tbsp vegan mayo
1/2 tbsp stone ground mustard
Pinch of salt
Pinch of ground pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder

Quesadillas
Corn or flour tortillas
Vegan cheese of choice (I personally used your heart gouda slices but also like the brand violife and Chao
(Optional) hot sauce
(Optional) avocado

Method:
In a bowl add (drained and rinsed) chickpeas and using a fork, mash. Then add in all the ingredients and mix together. Add a touch more of mayo if need be (or to your liking) and adjust seasonings as needed.

Make your quesadillas. *Add a tiny bit of oil to a pan if you want a crispy texture*. Add cheese to one side and once it is heated enough to fold, fold over and press down to allow cheese to melt… flip after 1 minute or so and remove from pan once cheese is melty. Add tuna to each quesadilla…you can return it back to pan if you would like the tuna to heat through but I kept it as is!
Add avocado slices and or hot sauce🌶️🥑
